one pot spaghetti- kid approved!

Have you tried any of those yummy looking recipes on Facebook or Pinterest? I decided to try the one pot spaghetti meal – and changed it up a bit. With some initial reluctance, the boys declared it a success!

ONE pot spaghetti Recipe

Throw the following into one pot and bring to a boil, boiling for 9 minutes or until the pasta is al dente:

16 ounces uncooked whole wheat pasta

4 cups low sodium chicken broth

1 large sweet onion, diced
2 cups halved tomatoes (I also added 1 15 ounce can of diced tomatoes with liquid)
1-2 Tbsp olive oil
6 cloves garlic, thinly sliced

Remove from heat and add:

1 large bunch of washed, chopped spinach
2 large sprigs basil, washed and chopped

Stir until the spinach is slightly cooked. Garnish with freshly grated Parmesan Cheese. (I added red pepper flakes for my bowl!)

Accompany this meal with a dark green leafy salad and fresh fruit. This is a meatless meal. You could boost the protein in the meal with adding leftover chicken or beans when the spinach is added.

Our reactions

The older two boys (ages 9 and almost 7 years now): “Oh, this is good!! Can I have more?”

Our 4 year old: “I don’t like tomatoes.” The boys then told him how ketchup comes from tomatoes. He picked a couple out and tried the pasta. “Oh! This IS good.” Again- I told him we only make good food in our house. He proceeded to eat the entire pasta meal, including the tomatoes (I laughed while he ate the spinach and basil with no issue).

Next time I make this, I will add extra tomatoes and extra fresh spinach – maybe even kale. It made plenty for leftovers for the following night! Try it – let me know what you add to your one pot meal!
